What do you look for in a commercial glasswasher?

At Bracton we think you should consider a number of criteria when selecting the most appropriate glass washers for your pub or club. So the next time you are looking for a glasswasher make sure you check your machine meets the following criteria.

Top and bottom wash and rinse arms – Many machines on the market only sanitise the inside of the glass, missing the lip & greases on the outside of the glass.

Low utility consumption – Choose a machine which uses under three litres a cycle, it will save the environment and you many dollars over the life of the machine ($700 – 1000 p.a.).

Performance – Soak cycle eliminates the need to hand wash glasses. Saves on labour and increases the quality of the beer glass, meaning better product presentation.

Reliability – Less moving parts, less plastic, more metal and quality parts. These are all signals of a long lasting glass washer.

Bracton glasswashers are approved by Smart WaterMark a not-for-profit scheme and are overseen by a Steering Committee with representation from Commonwealth and State Governments, Water Utilities, the four governing associations, and the chair of the Technical Expert Panel (an independent panel which assesses applications to the scheme).

Commercial refrigerators are often left out routine cleaning cycles, increasing the risk of food contamination from a variety of bacteria and fungus. Fortunately, has developed an easy to use food grade disinfectant with microbial properties, ideal for use in food areas.

How Vanilla Fresh works?
The natural power of vanillin absorbs the odours, while the Surface Active Technology goes to work, killing bacteria & fungus. Vanilla Fresh has been scientifically proven to remove bacteria at the source! (Surpass’s TGA Commercial Grade disinfecting & AQIS approved base). Vanilla Fresh will also prevent new bacteria growth, resulting in odour and bacteria free surfaces for longer!

How To Use:
Remove food items from spray area, apply Vanilla Fresh and wipe off excess product. Don’t forget the fridge seals! Vanilla Fresh is also ideal to sanitise and remove odours from carpets, rugs, tables, garbage and many other areas. Suitable to remove vomit, urine, tobacco smoke and other odours.

Golden amber, not pokie bandits, is the only hope

IGNORE the public bar at your peril. It’s a seemingly straight-forward lesson that hundreds of publicans across the state should not have overlooked. It’s a mantra that should be pasted behind the bar beside other managerial warnings such as “the customer is always right”, and “don’t trust a man who drinks light beer”.When pokies arrived last decade as the saviour of an ailing pub industry, drinkers quickly became the second-most important customer.

Seeking a quick financial fix, publicans revamped facilities and pokie rooms, treating coin-dropping customers as royalty and ignoring their once primary assets – drinkers.

When the global financial crisis crunched family budgets in 2008-09, the streams of gold flowing from the pokie machines began drying up. Suddenly, and perhaps not surprisingly, publicans soon realised their public bars were empty. Their drinkers had bailed, preferring the newly renovated bar down the street. Repeat that story several hundred times and you’ve summed up the state’s embattled pub industry, that is already struggling under the burden of heavy debt and plummeting asset valuations that threaten to close upwards of 300 pubs this year.

The publicans who looked after their drinkers are not in that basket. They made the right choice. It’s a grand understatement, but John Singleton knows a thing or two about beer. If he can’t make a pub or two run like clockwork then every publican should plan early retirement. Having recently bought four pubs with his mates, Singo has no ambition to do what every pub corporation has done in the past, and largely failed.

He just wants to serve good beer, and good food, in a good environment. What else is there?

With 2011 just around the corner, I took some time out to interview the guys at Bracton to get a sneek peek at Bractons’ plans for 2011. Here’s what they came up with!

When it comes to beer and cellar equipment, what do you believe hoteliers most often over look?

“When looking at the delivery of the perfect draught beverage there are variety of aspects hoteliers should consider. Though, until recently there has been a real lack of centralized, reliable & impartial industry information available to hoteliers. This lack of information or worse yet misinformation, has led to some venues making misinformed investment and maintenance decisions in regards to what equipment and processes are best for their venues. In an effort to combat these issues and to assist hotels in providing a centralised hub for industry information, Bracton has initiated the Bracton Quality Check Program, designed to provide professional venue specific reports. The Quality Check Program involves an onsite inspection and short Q&A where a qualified technician reviews a venues’ complete beverage system followed by a written report.

The report is designed to highlight areas where hoteliers should focus on their beverage system to improve in terms of safety, performance (energy/gas reductions) and product quality. Furthermore Bracton provides a confidential benchmark to show how your venue ranks. Upon launching the pilot program we had over 50 venues request (from 1000 venues) to be involved in this program in just the first hour alone.”

Does Bracton have any innovations or new products rolling out?
“Bracton has a total quality philosophy approach to product development. We constantly scrutinise products and seek areas of improvement to (1) increase safety, (2) eliminate waste, (3) reduce consumption of resources, and (4) simplify process or product designs. In 2011, hotels will continue to see greater efficiencies and improvements on existing Bracton product designs, further increasing reliability and performance. Bracton will also introduce a number of new equipment designs, developed in our offices and Europe to significantly reduce gas & electricity consumption in the cellar. Though we cannot go into too much detail yet!!!”

How can publicans maximise the profitability of draught beer?

“With some modification, most hotels can significantly reduce beer wastage and increase beer quality. For hoteliers to get the best out of their draught beer system, we recommend they take a serious look at in getting involved in the Bracton Quality Check Program. This low cost option, can systematically improve the draught side of their business, and at the very least inform them of the very best industry practices in beverage dispensing equipment from Australia, New Zealand, USA and Europe.”

Dangers of Ethylene Glycol

There are increasing incidence of Ethylene Glycol being used in Beer Refrigeration Systems as a secondary coolant. This is a very dangerous situation and has the potential to lead to death if ingested.

Below are the facts as to why All Breweries insist on Propylene Glycol and not Ethylene Glycol

Risks – Because secondary refrigerant is pumped around a beer system with flooded fonts, there is a slight chance there may be cross contamination. Therefore the refrigerant MUST be non-toxic.

Toxicity – Ethylene glycol poisoning is caused by the ingestion of ethylene glycol (the primary ingredient in both automotive antifreeze and hydraulic brake fluid). It is a toxic, colourless, odourless, almost non-volatile liquid with a sweet taste and is occasionally consumed by children for its sweetness. Following ingestion the symptoms of poisoning follow a three-step progression starting with intoxication and vomiting, before causing metabolic acidosis, cardiovascular dysfunction, and finally acute kidney failure. The major cause of toxicity is not the ethylene glycol itself but its metabolites.Propylene Glycol The acute oral toxicity of propylene glycol is very low, and large quantities are required to cause perceptible health damage in humans.

Identification
a. Raw Ethylene Glycol –Can be colourless or fluorescent green depending on supplier
b. Raw Propylene Glycol – Colourless
c. Bracton Long Life Propylene Glycol – Pink

Action to be taken where found
a. Inform manager immediately of its existence and arrange for its immediate removal from site.
b. If you are aware of any contractors knowingly using Ethylene Glycol demand that they stop immediately for you and your clients’ health.

With the recent introduction of electronic & low frequency sweeping sound (sonic) draught beer line cleaning systems, we at Bracton decided to do some investigation into the pro’s and con’s of such equipment in the beer industry. Here is what we found written by Technical Committee of the Brewers Association:

“Devices that purport to electrically or sonically clean draught lines are not a suitable substitute for chemical line cleaning. Although some sonic cleaners may inhibit bacteria and yeast growth, they have little or no cleaning effect on draught hardware and fittings.” (Brewers Association of America, April 2009) Furthermore, While ” .. you may or may not clean your own draught lines, but you have a vested interest in making sure the cleaning is done properly. Clean (beer) lines make for quality draught beer that looks good, tastes great and pours without waste.“

All Australian Breweries recommend licensed venues clean their draught beer lines once a week, using an brewery approved beer line cleaner. By choosing Bracton DP1 & DP2 beer line cleaners you can rest assured that your draught beer lines are the cleanest they can be!

The Technical Committee of the Brewers Association includes representatives from:

Anheuser-Busch, Inc. Colleagues

Boulevard Brewing Company

Brewers Association

Cicerone Certification Program

Water & electricity are a finite resources which we should look to preserve where possible & save money. Bracton has been reviewing the way we do business and how we can help our customers reduce significantly their consumption of water, chemicals & CO2 emissions. The two main areas we noticed was in beerline cleaning & glasswashing.

During the beerline cleaning process, we have found that excessive water is used to wash the chemical solution out of the beerlines. We identified the main cause is that cellar man is not using safety equipment and has a caustic solution on their hands which remains slippery after the solution is well and truly gone, causing the cellar man to believe the chemical solution may still be in the lines wasting many litres of water per line, which equates to thousands of litres over the year.

Bracton offers a simple solution to this, Bracton test papers. The test papers quickly, accurately & safely identify if there is a beerline cleaning solution in the line. If the paper turns blue there remains solution in the line, otherwise the paper will remain pink identifying that the line is safe to be used again, limiting the waste of valuable water.

The second area Bracton identified as water waster is glasswasher. Non recirculating glasswashers waste so much water and chemical its hard to believe why they aren’t illegal. When looking at our glasswashing consumption report for water, electricity & chemical cost / usage against a BR recirculating series glasswashers, it was easy to see how uneconomic non-recirculating glasswashers are, considering the alternatives.

The water consumption is reduce from 7Lt to 3Lt a cycle, Electricity consumption is greatly reduced as less water has to be heated, thus reducing the CO2 emissions by 7.83 tonnes every year & chemical usage is reduced due to the reduced water consumption. The labour component is from the need to hand scrub glasses before washing because of greasy hands, lip stick and so on. The BR series do not require this because they have top wash arms as well, over the typical non recirculating glasswashers that only use rinse arms.

Taking a few easy steps to save water will help you save your premises money & other valuable resources.
